Copy Paste : Champagne bubbles are caused by dirt in your glass.

I don’t mean to spoil anyone’s New Year’s eve, but you should know that champaign bubbles are caused by dirt particles inside your glass. These include dust particles and cellulose strands from the towel used to dry it. Dirt particles act as concentration points and launchpads for CO2 molecules that you see as bubbles rising in your glass.
